How many helpers do I need?

Do they bring the equipment?

Usually not — rented tables, chairs and marquees come from the hire company. Helpers provide the labour; if transport is needed, say so, as it requires a vehicle.

Will they do a late-night takedown?

Yes, though night work typically adds 30–50%. Agree the finish time in advance, since venues usually allow takedown only up to a fixed hour.
